When your baby only wakes up once in the night. Victory!
When you walk into The Loft on “50% off of EVERYTHING!!” day… wait, that’s every other day? Still a victory!
When you find a swim suit with full rear coverage at a store owned by an Eastern European lady. Victory!
When you get your baby to sleep in this piece of furniture made just for little babies to sleep in instead of your arms. Victory!
When you make it on time to anything after becoming a mother. Victory!
And when you somehow make an entire pie during nap time. SUPER VICTORY!
Now don’t judge this pie. I realize it doesn’t look like it should be on the cover of Martha Stewart Living or Bon Appetit, but this is hands down the very best pie I’ve ever made.
The filling is bright and tart, and the crust is tender and buttery.
A heads up for you celiac folks, this is not for you unfortunately. It does have spelt flour in it. I’m sorry.
For you gluten intolerant folks, I can’t rave about this recipe enough. I’ve been eating spelt flour for years with problem, but you’ll probably want to make sure your stomach does alright with it before using this recipe.
And for you lucky ducks who have no issues with gluten, I’d still highly recommend you trying it out. Just swap the gluten free all purpose flour for regular all purpose flour, and you are good to go.
