Coconutty Granola

Yelling at the TV while watching the Bachelorette with friends has now been added to ‘weekly things to do” list.  If you haven’t tried it, you really should.  It’s liberating and makes you feel incredible.

If you’ve even seen one episode of the Bachelorette this season, you’ve probably caught on to the fact that Ashley is a “feely” person.  She likes to feel something when she with them; she likes to emotionally feel the person; she also seems to like to feel them physically, because she has gotten her kissy kissy on.  A drinking game could easily be made from what she is feeling.

You’re going to need a wonderfully healthful breakfast to scrub away all the guilt you have from watching the Bachelorette.  Greek yogurt + fresh berries + granola makes me feel all squeaky clean.

Now, I already have an incredible granola recipe so for me to part from it even once, a new recipe would have to be pretty spectacular.

It happened.

While on my quick trip back home, my gorgeous mother had some granola for me to eat in the morning.  She had received a recipe from her friend and whipped it up herself.

I ate it and knew I had to try my hand at it.  I also knew immediately what it should be named: coconutty.  It has these large slices of coconut that are toasted to perfection and only add the nuttiness of this granola.

Another great thing about this recipe is that it could be easily adapted for those out there will nut allergies.

So make yourself feel good and eat this granola.

Coconutty Granola

recipe adapted from Arlo and Rosie

Ingredients:

  • 4 cups rolled oats
  • 2 cups wide coconut flakes
  • 2 cups sunflower seeds
  • 2 cups wheat germ
  • 1/3 cup sesame seeds
  • 2 cups sliced or slivered almonds
  • 3/4 cups canola oil
  • 3/4 cups maple syrup
  • 2 tablespoons honey
  • 2 tablespoons vanilla extract
Preheat the oven to 350 degrees.
In a large bowl, mix together all your dry ingredients. In a separate bowl, whisk together all your wet ingredients until very well combined.  Pour wet mix over dry mix and mix until thoroughly incorporated. Evenly split the mixture on to two cookie sheets (jelly roll pans).  Bake each cookie sheet separately for 30 minutes each, stirring at the 15 minute mark.  Let cool completely and store in the refrigerator.  Eat with milk or yogurt and say yummm.

    I think I need to try this whole “yelling at the TV while watching the bachelor” business. 😉 Oh and also, I meant to comment on your post yesterday, but I wanted to say that we should have teamed up on the “find cool cheap stuff” mission. I did the same thing Saturday and found some success at a garage sale 😉
